These used to be one of my favourite bikkies when I was a kid so I can't believe they weren't already on zaar. Ingredients:
125 g butter |
3/4 cup brown sugar |
1/4 cup honey |
1 egg |
1 1/4 cups self-raising flour |
1 cup plain flour |
3 teaspoons ground ginger |
2 teaspoons mixed spice |
1/4 teaspoon bicarbonate of soda |
1 cup icing sugar |
1 tablespoon lemon juice |
1 teaspoon butter, melted |
2 drops pink food coloring |
Directions:
1. Beat butter until creamy, add suagr beating until light & fluffy. 2. Mix in honey and egg. 3. Sift flours, spices & soda together, fold into butter mixture. 4. Place mixture into a piping bag fitted with a plain tube, pipe 6cm lengths onto baking paper-lined trays, allowing room for spreading. 5. Bake at 180.C for 12-15 mins, allow to cool before icing. 6. To make icing: Combine icing sugar with lemon juice, butter & colouring until smooth. Spread over biscuits. |
