New Zealand is famous for it's lamb and this is a great example. This was originally found which is the site for the New Zealan Lamb Cooperative. Ingredients:
4 new zealand lamb loin chops |
3 tablespoons lemon juice |
salt & freshly ground black pepper |
1/4 cup water |
1 teaspoon dry mustard |
1 tablespoon chopped parsley |
1/2 teaspoon chopped fresh lemon thyme |
1 tablespoon honey |
1 teaspoon arrowroot |
1/2 cup water |
Directions:
1. Heat heavy based frying pan and brown the chops on both sides. 2. Sprinkle with salt and pepper. 3. In a small bowl, mix lemon juice, water, mustard, parsley and lemon thyme. 4. Pour mixture over the chops. 5. Cover with lid or foil and simmer gently about 1 hour or until tender. 6. Remove chops and keep warm. 7. Skim liquid fat from surface and mix the remaining liquid, honey, arrowroot, and water. 8. Cook until thickened and spoon over chops. |
