Honey-Grilled Chicken Breasts |

1/2 cup orange juice |
1/3 cup honey |
1/4 cup lemon juice |
1/4 cup reduced sodium soy sauce |
2 tablespoons minced fresh gingerroot |
12 garlic cloves, minced |
1/2 teaspoon pepper |
1/4 teaspoon salt |
48 ounces boneless skinless chicken breast halves (8- 6 ounces each) |
Directions:
1. In a small bowl, combine the first eight ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade. 2. Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 inches from the heat for 5-7 minutes on each side or until a meat thermometer reads 170°, basting frequently with reserved marinade. 3. Time does not include marinating. |
