Honey Glazed Chicken Stuffed Potatoes |

great as a side dish or served with a nice leaf salad...so good. Ingredients:
4 large baking potatoes |
1 cup cooked warm chicken, skinned |
and cut into chunks |
2 spring onions, roughly |
chopped |
1/4 cwalnuts, roughly chopped |
75ml clear honey |
1/2 t sp cayenne pepper |
salt and pepper to taste |
Directions:
1. Bake the potatoes in a 425F oven for 1 to 1 1/4 hours. (Be sure to 2. prick skin with a fork first.) In a large mixing bowl combine 3. remaining ingredients and carefully mix together. When the potatoes 4. are done, cut a deep cross almost through them and allow them to fan 5. out. Melt a little butter into each potato and spoon on the topping. |
