From the National Honey Board Ingredients:
1/2 cup soy sauce |
2 tablespoons onions, finely chopped |
3 garlic cloves, minced |
1 tablespoon vegetable oil |
1/2 teaspoon fresh gingerroot, grated |
4 -5 lbs roasting chickens, whole |
1/4 cup honey |
2 tablespoons soy sauce |
Directions:
1. Stir together 1/2 cup soy sauce, onion, garlic, oil and ginger root. 2. Place chicken in plastic bag and place in a bowl. Pour soy sauce over chicken and close bag. 3. Chill for 3 hours, turning chicken occasionally to distribute marinade. 4. Drain. Preheat oven to 375°F. 5. Place chicken breast side up on rack in shallow roasting pan. Roast in 375°F oven for 1-1/2 hours or until done. 6. Mix 1/4 cup honey with 2 tablespoons soy sauce. Baste chicken with honey-soy mixture during last 15 minutes roasting time. |
