Carrots taste better with honey, so much so, that you won't even have to encourage the kids to Eat your carrots, they're good for your eyes! And, research shows that cooking carrots actually increases the antioxidant value in them. Ingredients:
1 lb carrot, peeled and cut on the diagonal into slices |
3/4 cup chicken broth (low-sodium canned is fine) |
1/2 teaspoon salt (or, to taste) |
4 tablespoons honey |
2 lemons, juice of |
Directions:
1. In a saucepan, combine the carrots with the chicken broth and salt over medium heat. Bring broth to a boil and cook for about 5 minutes, or until crisp tender (DON'T overcook). 2. Drain off the chicken broth. 3. Add the honey and lemon juice to the carrots in the saucepan; simmer until the carrots are lightly glazed, just a couple of minutes. |
