Something hot to drink during winter or drink it cold in summer! Add more honey if you need to: water it down if the ginger is too spicy for you. Very flexible!
Ingredients:
8 cups water
2 large piece gingerroot
1 teaspoon lemon juice
1/2 cup honey
Directions:
1. Peel and mince the ginger so that you get 1 cup of raw minced ginger.
2. Add the ginger to 8 cups of hot water (not boiling), and leave it on medium heat for about 15 minutes.
3. Take water off of heat and let it steep for another 15 minutes.
4. Strain out the ginger pieces and add honey and lemon juice, stir well.
5. Store in the fridge for up to a week.
