I've never met a kid who didn't like these cooked carrots. If you don't have a microwave, pile all the ingredients into a skillet over medium heat and saute them until tender-crisp. Ingredients:
6 large carrots, peeled |
2 tablespoons olive oil |
1 tablespoon grated fresh ginger |
2 tablespoons honey |
1/2 teaspoon coarse salt |
Directions:
1. Using a food processor or large grater, shred the carrots. Pile them on a microwave-safe plate and toss with the olive oil, ginger, honey, and salt. Cover and microwave on high for 3 to 5 minutes or until tender-crisp. |
