This cookie evolved out of one made by G-Roberts. I've added the lemon zest and a little ginger to perk up the flavor factor and even though I'm not fond of candied fruit, these are a big hit for cookie swaps.
Ingredients:
1/2 cup of unsalted butter
1/2 cup of granulated sugar
1/2 cup of orange blossom honey
zest of one lemon
1/2 tsp of salt
1 egg
1 tsp of vanilla
1/2 teaspoon of ground ginger
2 1/3 cup of sifted flour
1/2 tsp of baking soda
1/2 tsp of baking powder
1 cup of mixed candied fruit
1/2 cup of chopped pecans or walnuts-your choice
Directions:
1. Cream the butter and sugar together.
2. Beat in the honey, salt and lemon zest.
3. Add the egg, the vanilla and beat well.
4. Sift dry ingredients together in a large bowl.
5. Stir in wet mixture to dry and mix well.
6. Add the fruit and nuts.
7. Drop by the spoonful on baking sheet.
8. Bake at 350 degrees for 12 to 15 minutes.
9. I tie these up in cellophane bags for Christmas gifts.
