Honey-Dijon Pork Tenderloin |

Great 30 minute recipe. Prep time can be cut down by using a food processor to slice onions and mushrooms. Ingredients:
1 (1 lb) tenderloin, cut inti 1 inch slices |
1/8 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon olive oil |
1 small onion, chopped |
1/2 cup sliced fresh mushrooms |
1 tablespoon butter |
2 garlic cloves, minced |
1/2 cup evaporated milk |
2 tablespoons dijon mustard |
1 tablespoon soy sauce |
1 tablespoon honey |
1 cup hot cooked pasta |
Directions:
1. Flatten pork slices to 1/2 inch thickness, sprinkle with salt, and pepper. 2. In a large skillet over medium heat, cook pork in oil in batches until meat is no longer pink. 3. Remove and keep warm. 4. In the same skillet, saute onion and mushroom in butter until tender. 5. Add garlic, saute for 1 minute. 6. Stir in milk, mustard, soy sauce, and honey. 7. Ruturn pork to pan and heat through. 8. Serve with noodles. |
