A moist chicken dish with a fabulous sauce that has natural sweetness. I serve this over brown rice. Ingredients:
12 boneless skinless chicken breast halves |
4 garlic cloves, minced |
salt and pepper |
1 tablespoon vegetable oil |
2 tablespoons cornstarch |
1 1/2 cups unsweetened pineapple juice |
1/2 cup water |
1/2 cup dijon mustard |
1/3 cup honey |
Directions:
1. Rub chicken with garlic. Sprinkle with salt and pepper. 2. In a skillet, cook chicken in oil until no longer pink. 3. In a bowl, combine cornstarch, pineapple juice and water until smooth. Stir in honey and mustard. Add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon half of the chicken and sauce into a greased 11 x 7 baking dish; cool. |
