Couldn't figure out what to do for dinner, and had ginger and sole-so played with a few ingredients to make this easy dinner that I served over lime cilantro rice. Ingredients:
4 sole fillets |
1/3 cup honey |
1/4 cup dijon mustard |
1 tablespoon curry |
1/4 cup melted butter |
1 tablespoon grated fresh ginger |
fresh cilantro |
Directions:
1. Preheat oven to 350 degrees. 2. Mix together melted butter, honey, dijon mustard, curry. 3. Lightly grease shallow baking dish (I used olive oil). 4. Place fillets in baking dish and cover with sauce. 5. Bake uncovered for 15-20 minutes. 6. Top with cilantro. 7. Enjoy! |
