A healthy muffin, mosit with honey. One can serve with honey butter Ingredients:
2/3 cup milk |
1/3 cup butter or margarine, melted |
1/2 cup honey |
2 eggs |
1 1/2 cups whole-wheat flour |
2/3 cup cornmeal |
2 1/2 teaspoons baking powder |
1/4 teaspoon salt |
Directions:
1. In small bowl, beat together milk, butter, honey and eggs. 2. Set aside. In large bowl, stir together dry ingredients. 3. Add honey mixture. 4. Stir just enough to barely moisten flour. 5. Do no overmix. 6. Spoon batter into paper-lined or greased muffin pan cups. 7. Bake in preheated oven at 350 degrees for 20 to 25 minutes. 8. Serve warm |
