Another corn muffin recipe. I love to serve with soups and stews Ingredients:
1/2 cup butter |
2/3 cups sugar |
1/4 cup honey |
2 eggs |
1/2 tsp salt |
1 1/2 cup flour |
3/4 cup corn meal |
1/2 tsp baking powder |
1/2 cup milk |
3/4 cup corn, may use fresh, frozen or canned |
Directions:
1. cream together butter, sugar, honey, eggs and salt in large bowl 2. add dry ingredients 3. slowly add milk 4. add corn and stir in by hand 5. fill greased muffin tins 1/2 full 6. bake 400 degrees 20-25 minutes or until muffin tops begin to turn brown. |
