Honey Chipotle Grilled Corn |

This is a great grill recipe but it can also be adapted to do under the broiler by boiling the corn on the cob first and then finishing it under the broiler. Ingredients:
2 chipotle chiles canned in adobo |
1/2 cup butter, melted |
1/3 cup honey |
1 clove garlic, minced |
1/8 teaspoon salt |
8 ears corn, in husks |
Directions:
1. Heat grill to medium high. Combine chiles, butter, honey, garlic and salt in a blender; blend until smooth. 2. Put unhusked corn on grill and cook, turning occasionally, 15 minutes. Husks will blacken. 3. Transfer corn to work surface and remove husks. Brush ears generously with butter mixture and return to grill. 4. Grill until lightly browned, about 5 minutes. Serve warm with remaining butter. |
