This is probably my favorite recipe. Its exactly what it sounds like, chicken coated in chili pepper and honey with a touch of lime juice. You can cook it in the oven or on the grill. Minced garlic works well for a variation. Ingredients:
6 chicken drumsticks (you can use thighs too or sub hot wings) |
2 tbs chili powder (use your favorite kind, whatever heat level you like. i usually use 1/2 ancho and 1/2 regular chili powder. for a good kick sub cayenne for one half.) |
1 tbs honey |
1 tbs fresh lime juice (i like key limes) |
1 ts kosher salt |
freshly ground black pepper |
Directions:
1. Put oven rack in upper third of oven and preheat to 425°F. 2. Use 10 by 15 inch shallow baking pan lined with foil and an oiled up-metal rack. 3. Mix everything except chicken in a mixing bowl well using a fork. 4. Add chicken to bowl and mix. 5. Arrange chicken in a single layer on the rack. 6. Bake, uncovered, for 30 to 35 minuets turning once. |
