This is the best chicken salad that I have ever made. The original recipe was from a Southern Living magazine. But I have changed a few things to suit my taste! Ingredients:
4 cups chopped cooked chicken |
3 celery ribs, diced |
1/2 cup dried sweetened cranberries |
1/2 cup chopped pecans |
1 1/2 cups low-fat mayonnaise |
1/3 cup honey |
1/4 teaspoon salt |
1 teaspoon fresh ground black pepper |
Directions:
1. Stir together first four ingredients. 2. Whisk together mayonnaise and next 3 ingredients. 3. Add to chicken mixture, stirring gently until combined. |
