This is a remake of a pass down recipe, that I have tried to recreate do to lossing it somewhere in az. It is not yet right, but it is getting closer. I hate when I lose something this important to myself from my Grandma. Read more . Her Grandmother came from Ireland and she brought the recipe with her. Ingredients:
2 1/2 cups flour |
1/2 teaspoon baking soda |
2 1/2 teaspoons baking powder |
1 1/4 teaspoons allspice |
1 teaspoon ground cinnamon |
1/4 teaspoon nutmeg |
1 teaspoon ground ginger |
4 eggs, beaten; of course freah is best so i found a place to buy them on a farm |
1 1/4 cups granulated sugar, i use raw sugar |
1/2 cup safflower oil, any oil will do, the closer to the source you can get the better |
1 cup raw honey, i get this delievered, but i bet you could find it at a farmers market |
Directions:
1. Preheat oven to 350ºF. 2. Grease and flour a 9x13 baking pan. 3. Combine all ingredients in a large bowl, stirring well. 4. Pour into pan, and bake for 45 minutes. 5. About 30 minutes in I open the ove and sprinkle just a touch of raw sugar on top to give it a finished look. 6. Finish cooking it. 7. Serve unfrosted. 8. ============= 9. Notes: Yield: 1 cake 10. Use for: Imbolc 11. If cut into twelve equal pieces, each piece has approximately 270 calories. 12. ============== 13. I had at one time cresent moon shaped cake pans. I had 13 of them. My origianl recipe fit perfect into these. Lost those too in the van. They too were my Grandmothers, I have no idea where to find replacements. sigh |
