This was my wedding cake - can't remember where the recipe came from. I love this warm honey-and-spices cake. Great alone, with a glaze or with a cream cheese frosting. Ingredients:
2 1/2 c all-purpose flour |
2 tsp baking powder |
2 tsp cinnamon |
1/2 tsp baking soda |
1/2 tsp salt |
1/2 tsp ground cloves |
3 large eggs |
1 c honey |
1 c sugar |
1 c vegetable oil |
1/2 c brewed coffee |
1/4 c water |
Directions:
1. Preheat oven to 350ºF and generously butter a 12-cup bundt pan (or sheet cake pan). 2. In a large bowl, sift together flour, baking powder, cinnamon, baking soda, salt and cloves. 3. In a small bowl, lightly beat eggs. 4. Make a well in the center of the flour mixture and add eggs with remaining ingredients, whisking until combined well. 5. Pour batter into pan and bake in middle of oven until a tester comes out clean (about 50 minutes). 6. Cook cake in pan on rack 20 minutes and turn out onto rack to cool completely. 7. Keep in airtight container at room temperature for up to one week. |
