I copied this recipe from a friend of mine and it has been a hit at our house ever since. It is very low in fat and high in flavour! The recipe makes 3 loaves which freeze very well. I prefer baking the loaves in silicone loaf pans, as I found that the bottom tended to burn a bit when baking them in non-stick pans. Tastes great with a bit of butter and a cup of coffee. Ingredients:
6 cups flour |
3 cups sugar |
2 teaspoons baking soda |
2 teaspoons baking powder |
1 teaspoon salt |
4 teaspoons pumpkin spice |
2 teaspoons nutmeg |
1/2 teaspoon ginger |
6 teaspoons cinnamon |
3 teaspoons allspice |
1 teaspoon ground cloves |
4 cups boiling milk |
1/4 cup honey |
Directions:
1. Bring milk to a boil in the microwave. In a separate bowl, blend all dry ingredients. Slowly add milk and honey. Mix well. Pour into 3 greased loaf pans and bake at 350F for about 1 hour. |
