I made this cake just because I liked the name of it and we just love it. Not too sweet. Really good with a hot cup of coffee or cocoa.. The recipe is from Kathy in North Carolina but I’m sure she won’t mind me sharing it with you all. Ingredients:
1 (18.25-oz) white or yellow cake mix |
4 egg whites |
sour cream (8-oz) |
applesauce (2/3-cup - unsweetened) |
brown sugar - 1/2-cup |
2-tspn ground cinnamon |
1 1/2-cups confectioners’s sugar |
3-tbspn milk |
1-tspn vanilla extract |
Directions:
1. In a large mixing bowl, combine the cake mix, egg whites, sour cream and applesauce. 2. Beat on low speed until moistened. 3. Beat on medium for 2 minutes. 4. Pour half into a greased 13X9X2-inch baking pan. 5. Combine brown sugar and cinnamon’ sprinkling over batter. 6. Cover with remaining batter’ cut through with a knife to swirl. 7. Bake at 325̊ for 35-40 minutes or until a toothpick comes out clean. 8. Cook on a wire rack. 9. For glaze, combine confectioner’ sugar, milk and vanilla until smooth; drizzle over warm cake. 10.
