Ingredients:
1 cup whole wheat flour |
1/2 cup all-purpose flour |
1 teaspoon baking soda |
1/2-1 teaspoon ground nutmeg |
1/4 teaspoon salt |
2 eggs, lightly beaten |
1 cup mashed ripe banana (1 or 2 medium) |
1/2 cup unsweetened applesauce |
6 tablespoons honey |
Directions:
1. In a large bowl combine the first 5 ingredients. 2. Combine eggs, banana, applesauce and honey. 3. Stir into dry ingredients just until moistened. 4. Coat muffin cups with nonstick cooking spray. 5. Fill two-thirds full with batter. 6. Bake at 375° for 15-18 minutes or until toothpick comes out clean. 7. Cool 5 minutes before removing from pans to wire rack. |
