A delicious lentil recipe from the More-With-Less Cookbook. Ingredients:
2 1/3 cups lentils (1 lb) |
1 small bay leaf |
5 cups water |
2 teaspoons salt |
1 teaspoon dry mustard |
1/4 teaspoon ground ginger |
1 tablespoon soy sauce |
1/2 cup chopped onions |
1 cup water |
1/3 cup honey |
Directions:
1. In a dutch oven or saucepan combine lentils, bay leaf, 5 cups water and salt. 2. Bring to a boil. 3. Cover, reduce heat, and simmer for 30 minutes. 4. Discard bay leaf. 5. Preheat oven to 350 degrees F. 6. In a bowl combine dry mustard, ginger, soy sauce, onions and 1 cup water. 7. Add to lentils. 8. Pour honey on top. 9. Cover tightly. 10. Bake for 1 hour. 11. Serve over rice. |
