This is a really easy dish with alot of flavor. It's shows up quite often as a side around our house. I even smoked them a couple of times along side my Beer can chickens for a few hours. Ingredients:
2 acorn sqaush split in half lenghwise |
6 tbls. butter softened |
6 tbls. honey |
3 tbls dijon mustard or spicy mustard will do |
2 tbls brown sugar divided |
Directions:
1. Preheat the oven to 400 degrees 2. Split the Acorn Sqaush in half lenghwise ( I sometimes just barely shave alittle off the bottoms so they sit flat, but be careful not to cut through). 3. Mix together the Butter, Honey, Dijon mustard and 1 tbls. of the Brown sugar in a small mixing bowl. 4. Spoon the Honey mixture in the squash dividing it equally between them. 5. Sprinkle alittle of the remaining brown sugar over each one. 6. Bake at 400 degrees for 1 hour until squash is tender 7. Enjoy! |
