Muffins great for the mornings
Ingredients:
1 c. bran flakes cereal
1/4 c. milk
1 c. all purpose flour
1/2 c. honey
1/4 c. melted butter/ margarine
2/3 c. mashed ripe bananas
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ground ginger
Directions:
1. Heat oven to 375 degrees F.
2. In a small bowl, soak cereal in milk for 5 minutes.
3. In a large bowl, combine remaining ingredients, then add cereal mixture.
4. Beat at medium speed, scraping bowl often, until well mixed (1-2 min.)
5. Spoon into greased or paper-lined muffin pan, filling cups 2/3 full.
6. Bake for 20-25 minutes or until tops spring back when touched lightly.
7. Cool 5 min., remove from pan.
