This spectacular bread is very easy to prepare. Curry flavors and colors the dough while honey adds a bit of sweetness. There is no dairy or fat in the dough. This is best eaten when warm and fresh. Freeze unused loaves. Read more . Wonderful with soups such as sweet potato, pumpkin, and butternut squash soup. Great for sandwiches too as well as with butter and marmalade or fruit and cheese. Ingredients:
3 tbs active dry yeast ( check date for freshness ) |
2 2/3 cup warm water |
7-9 cups of flour or as needed for dough |
1/2 cup honey |
1 large egg |
1 tbs salt |
2 tbs curry powder |
1 beaten egg for topping |
poppy seeds for topping ( optional ) |
Directions:
1. This can be done in a stand mixer with dough hooks but I prefer to prepare this by hand 2. In a very large mixing bowl place the water, yeast, egg, honey, salt, curry powder and stir well 3. Gradually add a few cups of flour and mix with a wooden spoon 4. Keep adding enough more flour to form a dough that can no longer be mixed by the spoon but is soft and pliable and only slightly sticky 5. Now knead dough until smooth and elastic ( 5 + minutes ) by hand on a lightly floured surface 6. Form dough into a round 7. Place in a large oiled bowl and coat to turn dough 8. Cover bowl and let rise double in a warm place ( maybe an hour ) 9. Gently deflate dough and divide into 3 pieces 10. Form each piece into a loaf ( oval, round etc.) 11. Place loaves on a baking sheet(s) 12. Let rise double, covered-about 45 minutes 13. Now brush loaves with beaten egg and sprinkle on some poppy seeds if desired 14. Make a 1/2 inch slash diagonally across loaf or your own design 15. Bake in a preheated 400F until dark golden brown and loaves are done- about 30 minutes or so 16. Cool loaves completely on rack 17. Serve warm or room temp- freeze uneaten loaves. 18. Note: time preparation does not include the kneading, rising, baking etc. |
