Honey and Chili Beef With Beans |

The vinegar gives this dish its refreshing flavour. Lamb can be substituted for beef and a different type of beans could be used. Ingredients:
2 tablespoons oil |
500 g ground beef |
1 red capsicum, cut into strips |
1 green capsicum, cut into strips |
2 garlic cloves, crushed |
2 red chilies, chopped |
2 teaspoons grated fresh ginger |
1 teaspoon ground cumin |
1 teaspoon ground paprika |
1 cup beef stock |
1/2 cup tomato paste |
1/3 cup honey |
1/3 cup white vinegar |
2 tablespoons soy sauce |
440 g white beans |
Directions:
1. Fry the beef in the oil until well browned. 2. Add onion, capsicum, garlic, chillies, ginger, cumin and paprika and cook for 2 minutes. 3. Add stock, tomato paste, honey vinegar and soy sauce. Bring to the boil, reduce heat and simmer, covered for 10 minutes. 4. Add drained white beans and cook for a further 10 minutes or until mixture has reduced and thickened. |
