Honduran Pollo Con Salsa (Chicken In Sauce) |

Ingredients:
3 1/2 lbs frying chickens, whole |
1/4 cup cooking oil |
1/8-1/2 teaspoon hot chili powder |
1/4 cup ground sesame seeds |
3 whole cloves |
1 cinnamon stick |
1 teaspoon brown sugar |
1/4 teaspoon fenugreek seeds |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 cups boiling water |
2 tomatoes, chopped |
1 green pepper, chopped |
1 onion, chopped |
Directions:
1. Brown chicken in oil on all sides; remove from pot. 2. Add chili powder, sesame seeds, cloves, cinnamon, brown sugar, fenugreek, and salt and pepper; brown in oil. 3. Add remaining ingredients. 4. Simmer until tender. 5. Add chicken and cook until tender, turning occasionally. 6. Add more water if necessary. 7. NOTE: Peanuts can also be included in the sauce. 8. Pork, instead of chicken, may be used. 9. Woman's Day. |
