These scones and very nice to have with a cup of tea, the potatoes in the scones help to keep the moisture in, with the right fruit these are a tastey treat. Ingredients:
1 2/3c all purpose flour |
2/3 c whole wheat flour |
1/4c white sugar |
4tsp baking powder |
1tsp salt |
1/4 tsp nutmeg |
1/3c butter |
1/3c raisins or mixed fruit |
3/4c mashed potatoes |
1 whole egg |
1egg yolk |
3/4c milk |
Directions:
1. 1- In a large mixing bowl combine flours, sugar, baking powder, salt and nutmeg. Cut in butter until mixture is consistency of cornmeal. 2. 2- Add raisins or mixed fruit 3. 3- In a med bowl combine potatoes, whole egg, yolk and milk, whisk until it is smooth with no lumps. 4. 4- make a well in dry ingredients and add the liquids all at once. stir with fork to make soft slightly sticky dough. ( you can add a touch more milk if need be) 5. 5- kneed gently on powdered surface about 6 times and roll dough out for 1/2inch thickness and cut into triangular shapes 6. 6- place on ungreased cookie sheet and brush with slightly beaten egg yolk and sprinkle with sugar 7. 7- bake at 450F for 13-15min or until golden and enjoy :) |
