I love hominy, but many people these days don't seem to even know what it is, and often a lot of folks think they don't like it. Well, after they taste it served this way, there's a very good chance they'll change their minds. :) Ingredients:
16 ounces yellow hominy or 16 ounces white hominy, drained |
1 can condensed cream of mushroom soup |
1 can ro-tel tomatoes |
1 (3 ounce) can of chopped green chilies |
1 1/2 cups grated cheddar cheese |
2 slices cooked bacon, crumbled (optional) |
1/4-1/2 teaspoon ground cumin, to taste |
1/2 cup crushed corn chips |
Directions:
1. Preheat oven to 350 degrees F. 2. Mix all ingredients except for the crushed corn chips. 3. Pour into a 2-quart casserole and cover with the crushed chips. 4. Bake at 350 degrees for 35 minutes. |
