My Polish girlfiends Pickle soup, I made her recipe and its wonderful. The Vegeta seasoning ( ) had msg in it so I simply bought a pack of dehydrated veges and used that instead. Her recipe is only one of many ways each family repares the soup. Read more . Hers was vegetarian but a chicken or meat broth may be used. Ingredients:
fresh carrots cut up |
fresh potatoes cut up |
water or chicken broth to cover |
3 large polish pickes, shredded |
water or broth to cover |
vegeta seasoning ( vegeta.com ) |
salt and pepper to taste |
flour and cream to thicken only slightly |
Directions:
1. Cover potatoes and carrots with broth or water and cook tender. 2. Drain and reserve both vegetables and cooking liquid 3. Do the same for the pickles ( which require much less cooking time ) 4. Combine the pickles and vegetables together and set aside 5. Combine the vegetable broth and pickle broth and thicken only 6. slightly with a bit of cream and flour stirred together in the hot liquid 7. Season to taste with salt and pepper and Vegeta seasoning 8. Add the shredded pickles and vegetables to the soup and heat through 9. Garnish is optional of sour cream and chopped fresh dill- which she did not use 10. Yield depends on many veges and liquid is used |
