yet another good skillet cornbread! Ingredients:
1 1/2 c. yellow cornmeal |
2 1/2 c. milk |
2 c. all-purpose flour |
1 t. baking powder |
1 t. salt |
1/2 c. sugar |
2 eggs, beaten |
1/4 c. vegetable oil |
Directions:
1. Preheat oven to 400 degrees F. 2. Spray a cast iron skillet or 8 x 11 in casserole dish with non-stick spray. 3. In a small bowl, combine the cornmeal and milk; let set for 5 minutes. 4. In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil. 5. Stir just until moistened. 6. Pour batter into a prepared baking dish/cast iron skillet. 7. Bake in the preheated oven for 35-40 minutes or until a knife inserted in the center of the cornbread, comes out clean. |
