Homespun Scalloped Potatoes |

A flavorful twist on the old recipe, with chives and cream cheese. Ingredients:
cream cheese, 8 oz. cubed |
1 1/4 cups milk |
1/2 tsp salt |
1/8 tsp pepper |
4 cups raw potatoes, thinly sliced |
2 tbsp fresh chives, finely chopped |
substitute garlic chives for the regular ones if available |
Directions:
1. Combine the cream cheese, milk, salt and pepper in a large saucepan and stir over medium heat until smooth 2. Add the potatoes and chives and mix lightly 3. Spoon into a 1 1/2 quart casserole 4. Bake at 350F for about 1 hr and 10 mins. 5. Test the potatoes for tenderness to be sure. |
