This is my husbands favorite meal that his mom used to make when he was a kid. After trying it for the first time myself, I fell in love! Now it's a family favorite. It's easy and relatively inexpensive. If you love bacon you will enjoy this.
Ingredients:
1 lb pepper bacon, chopped
1 1/2 lbs round steaks, sliced
3 carrots, peeled and chopped
3 large potatoes, peeled and sliced
1 onion, sliced
3/4 teaspoon salt
3/4 teaspoon pepper
1 1/2 cups water
Directions:
1. In a large skillet (with a lid), brown bacon over medium heat.
2. Once brown, remove bacon and set aside. In bacon grease, brown steak.
3. Return bacon to skillet and layer 1/3 of the potato slices on top of bacon and steak. Then layer 1/3 of the carrots and 1/3 of the onions. Sprinkle with 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Repeat process (potatoes, carrots, onions, salt, pepper) two more times or until all ingredients have been placed in the skillet.
4. Pour in water. Cover and simmer for approximately 25 minutes, while gently flipping potato mixture every 5 - 7 minutes.
5. Meal is ready to enjoy once most of the water has been absorbed and the potatoes are cooked all the way through.
