Prepare pressure cooker veggie stock, using whatever leftover whole veggies available. Simmer at 10lb of pressure for 45 minutes. Drain broth through a strainer, keeping only the broth and discarding the cooked vegetables Ingredients:

1 cup carrots |
2 cups potatoes |
1 cup kale |
1 cup mushrooms |
1 cup lentils |
