Homemade Vegetable Beef Barley Soup |

This is my dads recipe for vegetable soup. Over the years I've added the barley and tomato sauce. Great soup to use up leftover vegetables. It's a kitchen sink kind of soup, but yummy! Ingredients:
6 medium potatoes |
4 medium carrots |
4 stalks celery |
1/2 cup green beans |
1 medium onion |
1/2 cup barley |
1 lb hamburger |
3 t tomato sauce |
12 cups water |
1 t salt |
1 t onion powder |
1 t garlic powder |
4 tablespoons margarine |
Directions:
1. Put ground beef in a skillet with 2 cups of water. Cook until the meat is no longer pink. Drain the water and grease off. Brown meat a bit longer. 2. Chop all the vegetables and place in a large pan with about 10 cups of water. Add meat and other ingredients. Bring to a boil and simmer all day long. The longer it cooks the better. I even put the pan in the fridge and then cook it more the next day. The longer it cooks the better the flavor. Add additional salt and pepper as desired. |
