I have looked for ways to sneak veggies into my kids meals for several years and this sauce has them eating several different veggies and loving it!!! I usually double (or triple) this recipe and freeze the rest of the sauce Ingredients:
2 tablespoons olive oil |
1 large onion, chopped |
5 garlic cloves, minced |
3 tablespoons italian seasoning |
1/2 teaspoon crushed red pepper flakes |

1 (28 ounce) can diced tomatoes |
1 (6 ounce) can tomato paste |
1/2 cup red wine or 1/2 cup white wine |
2 teaspoons sugar |
1 teaspoon salt |
2 tomatoes, chopped |
1 carrot, cut to 1/4-inch cubes |
1/4 bell pepper, cut to 1/4-inch cubes |
1 celery, cut to 1/4-inch cubes |
1/2 zucchini or 1/2 squash, cut to 1/4-inch cubes |
Directions:
1. Heat oil in a large stock pot over medium high heat. 2. Add onion, garlic, italian seasoning, red pepper flakes and pepper saute for 4 minutes. 3. Add tomato paste and stir for 3 minutes. 4. Add all other ingredents except salt. 5. Simmer over medium heat for 2 to 3 hours. 6. Add salt just before serving. 7. Water can be added to thin the sauce. 8. Hamburger can be added to the finished sauce (1 1/2 lbs.) if wanted. |
