This is a recipe that I learned from my mom. She was Vietnamese, but since her husband (my dad) was an American, she tried to make American dishes as well. Through the years, she would change & improvise. I could never get an exact recipe from her on this. On one of her last trips to NC to visit us, she made this & I made sure to watch very closely. This is a great recipe with a nice green salad & garlic bread!! Ingredients:
1 (12 ounce) package pasta (whichever you like!) |
3 tablespoons olive oil |
1 lb ground beef |
3 garlic cloves, minced |
1 large onion, sliced |
1 green pepper, diced |
1 (14 ounce) can diced tomatoes |
1 (14 ounce) can stewed tomatoes |
1 (4 ounce) can tomato paste |
1 cup water |
2 chicken bouillon cubes |
1/8-1/4 cup brown sugar (1/4 c. makes for a sweeter sauce) |
1/2 tablespoon oregano |
1/2 tablespoon basil |
1/4 cup freshly chopped parsley |
1/4 cup grated parmesan cheese |
Directions:
1. In a large pot boiling water, add a pinch of salt for flavor & add pasta. Cook according to package directions. Drain & set aside. 2. While pasta is cooking, in a large skillet add oil. Once oil is hot, add ground beef, onions, garlic & green peppers. Cook until ground beef & cooked thoroughly & onions are translucent. Drain. 3. Add ground beef mixture back into skillet & add tomatoes, tomato paste, water, chicken bouillon cubes, oregano, basil & brown sugar. Stir. Bring to a boil, stirring occasionally. Reduce to med. heat to bring the sauce to a simmer; cover with a lid & stir occasionally for about 10 minutes. 4. On a large platter, place pasta & then top with spaghetti sauce. Top with grated parmesan cheese & parsley. Serve with a salad & garlic bread. |
