Homemade Southern Banana Pudding |

This is my mother's recipe. However, she was even more of a sweetaholic than me so I cut the sugar a little (but not much). It's still very sweet, but very good. If you were raised in the South, this will be a familiar dessert for you. Ingredients:
1 12 oz. box vanilla wafers |
3 ripe bananas (sliced) |
2 1/2 cups sugar |
4 tablespoons cornstarch |
3 eggs well beaten |
1/4 teaspoon salt |
8 1/2 cups milk (i used 2% milk) |
1 tablespoon vanilla extract |
Directions:
1. Lay vanilla wafers and sliced bananas in large bowl. 2. Blend all other ingredients in large heavy sauce pan. 3. Take whisk and blend well. 4. Heat well over low - medium heat until mixture thickens. 5. When hot and thick pour over vanilla wafers. 6. Let cool and keep refrigerated. 7. Key to this recipe: Keep stirring the pot so that the pudding does not lump. 8. Enjoy! |
