18 ripe tomatoes (chopped with seeds removed) |
7 large onions chopped |
1/4 cup coarse salt |
ice cubes |
3 cups white sugar |
2 cups vinegar |
1 red and 1 green pepper chopped |
1 cup chopped celery |
1 tbsp mustard seed |
2 jalapeno peppers (seeds removed) |
3 tbsp corn starch |
3 tbsp vinegar |
1 tsp cayenne pepper |
Directions:
1. Place tomatoes and onions along with 1/4 cup of coarse salt in large contain and cover with ice cubes 2. Allow to sit overnight 3. Next drain well for at least 1/2 hour 4. Add 3 cups of white sugar 5. 2 cups vinegar 6. peppers 7. celery 8. mustard seed 9. and jalapeno peppers and simmer on stove for two hours with lid off 10. In separate bowl mix 3 tbsp corn starch, 3 tbsp vinegar and 1 tsp cayenne pepper 11. Add to salsa stirring constantly until desired consistency is obtained 12. Bottle and enjoy |
