We recently acquired a deep fryer. Since we got it I have been experimenting with making different things. This is the results of one of those experiments. My DH is super picky, but absolutely LOVES my potato chips. Ingredients:
6-8 large potatoes. (i use russets.) |

Directions:
1. Preheat deep fryer. 2. Scrub potatoes. They do not need to be peeled. 3. Slice potatoes ultra thin. The thinner the better. I use the slicing side of my grater. If they are too thick the chips won't be crispy. 4. Rinse potatoe slices with cold water. 5. Drain the potatoes, and try to squeeze out as much excess water as possible. 6. Before placing slices into fryer, pat them dry with a clean towel. This will reduce your oil splatter. 7. Place potato slices into fryer, about a handful or so at a time. 8. Fry for 8-10 minutes, or until golden brown. Give them a toss about halfway through to ensure thorough cooking. 9. Pour into a bowl lined with paper towels, or something to absorb the excess grease. 10. Salt to taste, and enjoy! 11. As an alternative sweet potatoes can be used instead. |
