Low Carb Pasta Sauce
Ingredients:
1 cup celery, chopped
1 cup onion, chopped
1 cup carrots, chopped
16 oz. eggplant, chopped
8 oz. mushrooms, sliced
28 oz tomatoes, crushed
6 oz. tomato paste
Directions:
1. Fry celery, carrots, onions and eggplant until onions are translucent.
2. Add can of crushed tomatoes and tomato paste.
3. Add 14 oz. water to thin.
4. Cover and simmer for 1 1/2 hours.
5. Add mushrooms and meat.
6. Simmer 1/2 hour more.
