I don't think I've ever actually made a batch of these that got into my cookie jar. They eat them as I make them. Ingredients:
1 package devil's food cake mix |
2 eggs |
2 tablespoons water |
2 tablespoons cooking oil |
1/2 cup cocoa |
1 package knox unflavored gelatin |
1/4 cup cold water |
1 cup crisco |
1 lb confectioners' sugar, plus |
1 cup confectioners' sugar |
1 teaspoon vanilla |
chocolate-flavor nestle nesquik powder |
Directions:
1. Combine first five ingredients and blend until you can shpe into ball. 2. Let stand 20 mins. 3. Roll dough into 1/2 balls and place 2 apart on a greased cookie sheet. 4. Flatten each with smooth side of a drinking glass which you have greased and dipped into Nestles Quick powder with each cookie. 5. Bake at 400 for 8 mins. 6. Remove and flatten again with back of spatula. 7. Cool. 8. Soften gelatin in cold water; place in heatproof cup in pan of hot water and allow to dissolve. 9. Meanwhile, beat crisco til light and fluffy and add sugar and vanilla. 10. Beat well; about ten mins. 11. Cool gelatin and beat into filling. 12. Use about 1 T of filling to sandwich each two cookies. |
