I found the original recipe on . This one is my own creation based on the old one. I don't remember since when I have started liking muesli for breakfast; it's just so healthy and refreshing and very quick-a good way to start the day:-) Now I make it once a week. Just store it in a airtight container in room temperature and it can last up to one month. See, I can make my own delicious muesli at home instead of buying one from the store for 6-7 bucks.
Ingredients:
3 cups oats
20 dried dates, cored and chopped
1/3 cup raisins
1/3 cup cashews, toasted and chopped (or any kind of nuts)
1/3 cup dried fruit (any kind such as berries)
1 tablespoon brown sugar
1 tablespoon canola oil
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup water
Directions:
1. Preheat oven to 350°F,180°C.
2. In a large bowl put oats. In a small bowl, mix brown sugar, oil, salt, cinnamon and water; stir until sugar dissolves.
3. Pour the sugar mixture over oats. Use a spoon to mix until evenly moist and then transfer to a large shallow baking dish.
4. Bake for 30 minutes or until lightly brown, stirring every 10 minutes.
5. Reduce the oven temperature to 140°C Add dates, raisins, cashews and dried fruit of your choice to the oats. Here I use medlar. Use a spoon to mix them well. Bake for another 5 minutes.
6. Let it cool completely and then put it in a airtight container.
7. Scoop some into a serving bowl, add chilled milk or yogurt, or fruit juice; give it a quick stir and you are ready to enjoy!
