Homemade Marshmallows

If you try these, you'll never want store-bought ones again! Looks and sounds more difficult than it is.
Ingredients:
powdered sugar
3 1/2 envelopes unflavored gelatin (2 tablespoons + 2 1/2 teaspoons
1/2 cup cold water (125 ml)
2 cups sugar (500ml)
1/2 cup light corn syrup
1/2 cup hot water
1/4 teaspoon salt
3 egg whites, room temperature
2 teaspoons vanilla extract
Directions:
1. Line the bottom and sides of a 13- by 9- inch baking pan with plastic wrap.
2. Oil and then generously dust with powdered sugar.
3. In a large bowl of an electric mixer, sprinkle gelatin over the cold water.
4. Let stand to soften.
5. In a large, heavy saucepan, cook sugar, corn syrup, hot water and salt over low heat.
6. Stir until sugar is dissolved.
7. Increase heat to medium-high.
8. Boil about 4 to 5 minutes without stirring.
9. Boil until a candy or digital thermometer registers 240 deg F or until syrup reaches firm ball stage.
10. Immediately remove from heat.
11. Pour hot sugar mixture over gelatin mixture.
12. Stir until gelatin is dissolved.
13. Beat mixture on high speed until white, thick and nearly tripled in volume (5-6 minutes)
14. In another large bowl with clean beaters, beat whites until they just hold stiff peaks.
15. Beat whites and vanilla into sugar mixture until well combined.
16. Pour into prepared baking pan.
17. Sift 1/4 cup powdered sugar evenly over top.
18. Refrigerate uncovered until firm ( at least 3 hours)
19. Run a thin knife around edges of pan.
20. Invert pan onto a large cutting board.
21. Sprinkle top with 1/4 cup powdered sugar.
22. With a large knife, trim edges of marshmallows.
23. Cut into 1-inch cubes.
24. Lightly grease the blade of your knife with vegetable shortening.
25. Cover new edges in powdered sugar.
26. Store.
27. For a deliscious treat, cover with melted chocolate.
