Homemade Lemon Curd

Try this on scones or toast. I'm guessing at the prep and cooking times.
Ingredients:
5 eggs
3/4 cup caster sugar
1 lemon, rind of, grated
2/3 cup lemon juice
125 g chilled butter, cut into small cubes
Directions:
1. Beat eggs and sugar until pale and doubled in volume.
2. Stir in lemon rind and juice.
3. Place bowl over a pan of simmering water.
4. Add butter piece by piece, whisking constantly until thick.
5. Serve cold.
