Homemade Ketchup With Carrot (Deceptively Delicious) |

Recipe from Jessica Seinfeld's book, Deceptively Delicious. Supposed to be a healthy alternative to ketchup and a sneaky way to get toddlers to eat their veggies. Ingredients:
1 (6 ounce) can tomato puree |
1/2 cup carrot puree (baby food is quick and easy) |
1/4 cup water |
2 tablespoons apple cider vinegar |
2 garlic cloves, minced |
1 tablespoon firmly packed brown sugar |
1/2 teaspoon dry mustard |
1/4 teaspoon salt |
1/4 teaspoon ground allspice |
1/4 teaspoon chili powder (to taste) |
Directions:
1. Stir all the ingredients together in a big saucepan and bring to a boil over medium-high heat. 2. Reduce the heat and simmer until the mixture has reduced by about half, 10-20 minutes. 3. Let cool before serving. 4. Refrigerate in an airtight container for up to five days or freeze in 1/4-cup amounts in zipper-lock snack bags for up to three months. |
