Ever wandered what to do with those left over mashed potatoes instead of throwing them away. Here you go. Ingredients:
2 cups mashed potatoes |
1 egg, beaten |
1 onion, finely diced |
1/2 tsp salt |
1/4 tsp ground black pepper |
2 t olive oil |
Directions:
1. Beat egg in a medium size mixing bowl 2. Add onion and mash potatoes to egg 3. Add salt and pepper 4. Heat olive oil in a medium size frying pan, over medium heat 5. Scoop the potato mixture into the frying pan in 4 inch circles 6. Pat with a spatula to flatten the mounds to approximately 1/2 to 1 inch thick 7. Cook until bottom is browned 8. Flip the patty over and brown on the other side |
