You can use oil for this instead of butter and it gets crunchier and you can use less oil than butter. This will keep for a week or two in an airtight container. Ingredients:
1 -3 tablespoon light no-salt butter (or olive oil) |
1 cup brown sugar, packed |
1/4 cup water |
1/4-1/2 teaspoon cinnamon |
7 -8 cups oats, quick cook kind |
raisins or dried cherries or dried cranberries, etc |
Directions:
1. Melt butter, brown sugar and water together in a pan over medium heat. 2. Stir well, and simmer for 2-3 minutes. 3. In a bowl, mix together cinnamon and oats and add to the brown sugar mix. 4. Remove from the heat and stir until all oats are well coated. 5. Place granola on a cookie sheet (with edges), and bake for 5 minutes at 375. Remove from the oven, and stir/flip granola and bake for another 5 minutes until granola is lightly browned. 6. Allow granola to cool on the cookie sheet. 7. Transfer to an airtight container when cool. |
