A French sausage I found in Better Than Store Bought. You can add 1 teaspoon of Spice Parisienne if you want. Ingredients:
4 teaspoons kosher salt |
1/4 teaspoon white pepper |
1/2 teaspoon sugar |
1 teaspoon minced garlic |
2 lbs ground pork |
1/3 cup wine |
Directions:
1. Mix all ingredients together. 2. Chill overnight. 3. Stuff into casings tying off at 5 inches. 4. Hang for 1 to 2 days in cool place (45°F). |
